Country Prawn Rolls

In the kitchen with Baker Bleu

This is a recipe to keep in your back pocket.

It's perfect for guests to eat during cocktail hour, at a picnic in the park or as you lay by the pool.

The Country Wheel Rolls are your secret weapon when hosting a crowd. With 36 bread rolls of sourdough goodness, there's enough to keep everyone happy. Adding your favourite sandwich ingredients and serving to your guests keeps it simple and delicious.

Ingredients (makes 6 rolls)

- 6 x Country Rolls
- 1kg cooked prawns, peeled and deviened
- 2 x lemons, juiced
- Baby gem lettuce, one to two leaves per roll
- Half a large bunch of dill, finely chopped
- Tabasco (measure with your heart)
- 4 x tblsp Kewpie Mayo
- Sea salt
- Cracked pepper

Method

Add to a large mixing bowl your prawns, dill, Kewpie mayo, Tabasco, lemon juice, sea salt and cracked pepper. Mix well until combined. NB: everyone's taste is different, add more mayo, lemon, salt if your heart desires!

Slice your Country Rolls and add a small squeeze of the Kewpie mayo to the inside of the top and bottom of the roll. Add the baby gem lettuce leaves and spoon on your prawn mix generously into each lettuce cup. Serve immediately.
